We’re taking part in the government scheme to support the hospitality industry post-craziness of lockdown. Every Monday, Tuesday and Wednesday in August, you can get 50% off your food and non-booze bill up to £10 per person per bill. 

It’s an unlimited offer so come and eat with us as many times as you like. You can try us for brunch one day, lunch the next and dinner the day after. Winner!

Conversations with…Beehive Food August 4, 2020

To help you get to know our food a little better and the importance to us of independent businesses, we’ll be doing a ‘Conversations with…’ series of our small, local suppliers. First up, the wonderful @beehivefood who we’re working with to bring you our new food menu.

Led up by chef, Ross Parker, who we met before Proof even existed, Beehive Food is full of Northern Soul and Independent love. After many years of training and cheffing with the likes of Paul Heathcote, Paul Faulker and Anthony Demetre at Arbutus in London, it was Ross’ passion for all things Manchester and local, with a focus on locally-sourced ingredients, that brought him to Beehive. Spotting a gap in the market, Beehive was born as a way of offering small independent bars with no kitchen space an opportunity to serve food to their customers. They act as the Manchester bee working to help small independents through their food hive.

Starting out with their, now well-known, scotch eggs & pork pies, their food products are now sold in around 30 small independent bars & restaurants around Manchester – Port Street Beer House, Taste of Honey, Albert’s Chop House & Ancoats General Store are just a few.

Expanding their hive beyond their food products, Beehive is now working to act as the central Manchester hub that brings together and supports local independents in the hospitality industry throughout the whole supply chain.

And so we became a Friend of Beehive, a small independent that works with Ross, the Beehive team and their whole chain of local Manchester-based suppliers to bring you locally-sourced ingredients in food with true heart and soul of the North. That means the bread we use from @holy_grain_sourdough, the cheese we serve from @thecraftycheeseman, the meat we buy in from @w.h.frost.butchers and every other ingredient we use is from small Manchester suppliers doing their independent thing. It’s from this area for this area so when you’re eating with us you’re actively supporting your local community. 

Beehive don’t stop there either. Their Northern heart extends out to Manchester-based charities Eat Well MCR who they were strongly involved with during lockdown – not least,Owen of the Beehive team was out doing all their lockdown deliveries! – and they also support Wood Street Mission every year. True Manchester worker bees.

Proof Bar & Kitchen was born! August 4, 2020

You may have noticed things look a little different round here! Welcome to Proof Bar & Kitchen. That’s right – our kitchen has been installed and we have a brand new look…and name! Something we’ve wanted to do for a long, long time and, now, the dream is real.

In collaboration with Beehive Food, we’ve created a delicious vegetarian-led menu of wholesome food that brings together independent suppliers and local ingredients to give you great food with relaxed vibes. We’re serving up brunch, lunch and dinner with late night bar snacks too, Salt & Pepper Chips, anyone?

Cocktail of the Week: Rollergirl June 23, 2020

Until you can be dancing at Proof again on 10th July when we’re planning our post-lockdown re-opening, we wanted to give you our favourite disco-dancing cocktail to make at home. A favourite signature of ours, The Rollergirl, has been on our menu since we opened 13 years ago! 

The perfect party drink, it promises the sweetest party in your mouth with flavours of raspberry vodka, passion fruit & pineapple. Follow our recipe to liven up the last weeks of lockdown drinking.

Recipe

50ml Stolichnaya raspberry vodka

25ml Passion fruit puree

10ml Passion fruit syrup

60ml Pineapple juice

25ml Lime juice

Method

Add all your ingredients into your chosen shaker with a sealed lid – tupperware or jam jar will do if you don’t have a fancy shaker. Shake hard with lots of ice.

Strain and serve long in a tall glass over ice. 

Garnish with raspberries and a pineapple leaf.
